If you've never been seduced by gefilte fish, it's time to give the wonderfully fishy dumplings another go.

Rosh Hashanah begins on September 16 and the Center for Jewish History is preparing with a celebration of Jewish cuisine, past and present. It will touch on the fascinating evolution of gefilte fish, which has adapted over and over as it's traveled the world -- from fish skins stuffed with force meat, to gelatinous meatballs, to beautiful loaves made from wild salmon.

Gefilte Talk takes place this Thursday evening, at 6 p.m., and will be moderated by Mitchell Davis of the James Beard Foundation. Guests will include Elizabeth Alpern and Jeffrey Yoskowitz of the Gefilteria, Zach Kutsher of Kutsher's Tribeca, Jack Lebewohl of 2nd Avenue Deli, and Omer Miller, an Israeli chef.

There will be kvass cocktails to accompany a tasting of traditional gefilte, along with several modern adaptations. Excited? Go here for ticket information.
