Croque Mademoiselle, $12

The bite-size Croque Madame at Sel et Gras, in the West Village, is given a cuter name, served as a cuter portion, and topped with cute fried quail eggs. And though it's a tiny version of the familiar sandwich, nothing is compromised in the miniaturization. There's crisp, buttered white bread, layers of soft, salty ham and thin slices of gruyere, all held together with a bit of milky bechamel, made extra creamy with cheese. It might just be a ham and cheese, but it calls for a glass of something bubbly.
