A new documentary from Thrash Lab sheds some light on the "hipster butcher" movement that is currently cutting its way through San Francisco. The film highlights the work of the city's much-loved meat purveyors The Local Butcher Shop, Avedano's Holly Park Market, and 4505 Meats, offering a behind-the-counter look into why this industry appealed to the young and tattooed bunch of cooks. For one pair, their store is merely a front for them to spend more time together, and for another, it was a way to feed families while making enough bacon to feed their own.
