He owns Doc's All Natural Spirits, a still-underground production line inspired by old Prohibition laws and Belle Époque culture. I visited the operation to learn about what it takes to make the "green fairy," indulging in a few sips of the spirit along the way.

Is Doc's absinthe meant to mimic the modern (i.e.,fake) Czech "absinthe" instead of genuine absinthe made in the traditional way? It looked very thin and it did not louche or get cloudy at all. It has to louche properly if it's going to be Belle Époque-style absinthe.
