This dark sliver of space on the Lower East Side, with its prominent bar and breeze coming in through open windows, feels most conducive to a long night of nursing craft beers (or perhaps Narragansetts and shots of whiskey) with friends, but the real pull here is the sandwiches, often expertly built by whoever is tending bar. The spot turns out a rotating board of seasonal options, and you should get in quickly to experience the squash blossom, which starts with a basic combination of sweet mozzarella cheese and fat, juicy slices of heirloom tomato that's crowned with the delicate, grassy blossoms and ribboned with spicy aioli. The stack is compressed between two halves of a baguette and griddled until the cheese oozes out the sides; the result is a refreshing take on a tired old caprese that manages to showcase some of the excellent produce in the market right now. You could add a runny-yolked egg or a slab of bacon that's about as thick as (throwback time) a floppy disk, but unless your pork meter is running dangerously low, you really don't need to--the vegetarian version packs a punch all by itself.
