Pig and Khao's Khao Soi, One of Our 100 Favorite Dishes

No. 48: Khao soi from Pig and Khao

If there's one dish we've been craving all summer long, it's northern Thai specialty khao soi: After one stellar version at Uncle Boons, we found a second iteration that's just as worthy not far away at Pig and Khao, the Lower East Side Thai-Filipino joint from Leah Cohen and the Fatty Crew. In it, long flat rice noodles and supple bits of chicken (as opposed to the batter-encased leg in the Uncle Boons version) mix with piquant pickled mustard greens and shallots in a pungent curry that flashes bright with tartness and heat until it's smoothed out by soothing coconut milk. A tuft of deep-fried noodles crowns the dish and adds crunch, and it's served with a lime in case you want more flavor-sharpening acid (we recommend it). Perhaps our favorite part of the khao soi at Pig and Khao, though? That you can get it for dinner with self-served bottomless beer and then return the next day for brunch, when you can slurp it down while you take down the meat and juice of a whole coconut. Best hangover cure ever.
