No. 27: Calzone from Di Fara

Midwood's pizza mecca gets infinite praise for its perfect pies, but the monster calzone deserves its own following.

Pizza Pope Dom DeMarco and his enterprising family have made Di Fara Pizza far more famous than any poor bastard named Ray could dare to dream. And for as long as he's still able, Mr. DeMarco shall remain a fixture of the Di Fara experience, anointing pies with snips of basil leaves and sprinkling Parmesan with the panache of a jovial Italian wizard--though not the kind found at Silvio Berlusconi's bunga bunga parties. For a place that serves archetypal New York-style pizza, Dom's calzone doesn't look like any burnished dough pocket we've ever seen. Crafted with a sculptor's care, the gargantuan crescent exits the oven sporting teeth like a chewy sprocket. Mozzarella and ricotta spill out of the sides where the calzone has been portioned, and of course it just wouldn't be a Di Fara dish without a healthy (or unhealthy) dose of Parmesan. With no sauce to stand up to the barrage of dairy, the interior's profound milkiness is amplified, complemented by sharpness from the Parmesan and burnished crust. Technically, yes, it's a calzone. But it eats like something far greater.

Later this year, we'll pen our Best of New York issue, our annual love letter to what's great in this town. When that paper hits the streets, you'll find our picks for the very best this city has to offer when it comes to dozens of cuisines, restaurants, dishes, and drinks. Until then, you can get a taste of our contenders as we count down, in no particular order, our 100 favorite dishes from around the boroughs, a list of laudable eats worth tracking down right now.
