Michelin-starred chef Jon Fraser channels his French training for this edible ode to autumn.

Dovetail's New American cooking often rearranges traditional European flavors, keeping ingredients familiar while presenting them with a suave sincerity. The restaurant has incorporated several menu changes over the years, including a Sunday prix fixe and Monday vegetarian tasting, but the season always dictates. Now that we're knee-deep in fall, Fraser is busting out the burgundy truffles, draped over a slice of smoked duck prosciutto and paired with a galette of caramelized onions in all its flaky, buttery glory. Reminiscent of tarte flambé, the galette holds layers of deeply burnished onions, ricotta cheese and more truffles. This Francophilic aromatherapy is joined by a quenelle of sweet onion jam, whose sugary tartness helps with the plate's heavier accoutrements. Dovetail is by no means an inexpensive restaurant, but the galette is luxurious enough that a tasting portion is enough to satiate, especially with the included bread service and amuse. Saddle up to the bar, order a beer, and toast the season.
