Tristan Willey Out at Booker & Dax (UPDATED)
Original item, 7 a.m.: For the last two years, Tristan Willey has managed the bar at Booker & Dax (207 Second Avenue, 212-254-3500), where he's racked up accolades for his innovative cocktail work. But now we get wind that Willey's time there is done, and as of Monday, he's moved on to other projects.

Update: Both Willey and the Momofuku crew weighed in on what comes next
That's confirmed by Willey's Facebook page:
We just spoke with Willey about the past, present, and future of cocktails as he geared up to pour drinks for Le Fooding, the renegade dining experience that went off last weekend. In that chat, the bartender divulged that he was most excited about taking bartending to the next level, improving techniques for better results. "The future is more about utilizing things we'd never previously had access to in order to make our jobs easier and make higher quality drinks," he explained.
We've reached out to Willey to hear about his plans and we've contacted the Momofuku team about who will step up to fill the void. We'll keep you posted.
Update, 2:50 p.m.: Momofuku sends this statement about Willey's departure:
Tristan Willey is leaving Momofuku to move on to new opportunities. Momofuku gratefully acknowledges Tristan for being an integral member of Booker and Dax. He will be missed. With Tristan's departure, Dave Arnold along with Booker and Dax's bar managers Robby Nelson and Maura McGuigan will continue overseeing the beverage program at Booker and Dax.
And Willey writes in an email that he can't divulge his plans just yet.
