When one restaurant's doors close, another restaurant's doors open in fast-paced New York City, and every Friday, we'll fill you in on what opened up around town this week. This week: a ramen shop two years in the making finally opens its doors, a low fat doughnut option is now available to New Yorkers, and a Lower East Side staple opens up its first cafe.

Après, 60 Third Avenue, 212-254-0888

Apiary owner Jenny Moon brings the East Village a spot called Après, where the kitchen is under the command of chef Mazen Mustafa, formerly of The Elm. The menu is comprised of vegetable-focused dishes like heirloom carrots with koji and crudités with soy miso royale. We spoke to Mustafa, who told us, "We're trying to take the nose-to-tail idea with vegetables. We're using the whole thing as many different ways as possible." A few of the cocktails include veggies as well, like the carrot cocktail with gin, ginger, and Campari.

Azasu, 49 Clinton Street, 212-777-7069

Yopparai's husband and wife duo Gaku and Christy Shibata bring us Azasu, a Japanese restaurant. The menu includes items like pan-fried gyoza, curry, and plenty of sake. When we spoke to Christy last month, she told us, "We're hoping to be an addition to the neighborhood where people are comfortable."

Delaware and Hudson, 135 North 5th Street, Brooklyn, 718-218-8191

The former Egg space in Williamsburg is now Patti Jackson's Delaware and Hudson. Jackson recently told us, "I'm fascinated by American food and old-school things and the farmers markets. I wanted to do that kind of food. With regional food, it's always southern or Californian. But there are great things to be had between Chesapeake Bay and Long Island and the Jersey Shore." The chef is focusing on seasonal dishes that will change often. Currently, the menu features a plethora of ramps, which can be found in butters, fritters, and more, but expect that to quickly change as the farmer's markets' stock changes.
