Dish no. 100: The Clean Slate at Saltie (378 Metropolitan Avenue, Brooklyn, 718-387-4777)

It seems appropriate to kick off our countdown of our 100 favorite dishes in the city with a dish called the clean slate. With its menu full of vegetable-forward sandwiches, Saltie makes a compelling argument for eating less meat, and this item is strong supporting evidence for its case. The kitchen takes warm naan, trowels it with garlicky hummus, heaps it with fluffy bulghur wheat and tart pickled veggies, drizzles it with a refreshing yogurt sauce, and speckles it with fresh herbs. It's an unlikely combo that's especially ideal for a hot summer day, or any time your body feels like it could use a break -- this sandwich has the psychological effect of wiping away the effects of whatever other crap you've consumed lately and restoring you to, well, a clean slate. And if that sounds a little too healthy, you could always restore the balance with one of the shop's pastries.
