The Brooklyn Star's Smoked Bone Marrow, One of Our 100 Favorite Dishes

BoneMarrow

Dish no. 68: Smoked bone marrow at The Brooklyn Star (593 Lorimer St, 718-599-8999)

Since 2009, the Brooklyn Star has been serving overly stylish Brooklynites tasty and reliable southern comfort food. The menu doesn't change much, and for good reason: almost everything on it is delicious. One of the finest dishes is the roasted bone barrow, which is served with Texas toast, red onion jam, parsley, and coarse sea salt. Slather the rich, smoked marrow on the crisp, heavily-buttered toast and then garnish your bite with parsley, which adds sharpness, and acidic onion jam, which curbs the unctuousness of the spread. It's a near perfect combination of textures and flavors coming together.

In advance of our 2014 Best of NYC issue, we're traipsing through the boroughs and divulging our favorite dishes of the year. They're presented here as a countdown, but we're listing them in no particular order. Consider this a guide to what's good to eat in this town right this very second.
