Dish no. 46: Pig's Ass Sandwich from Casellula (401 West 52nd Street, 212-247-8137)

With a cheese program that was initiated by The Modern alum Tia Keenan, Casellula is widely regarded for its innovative dairy pairings, and it still serves cheeses with ingredients as diverse as carrot puree, meringue, and peanut brittle. But the main attraction of this tiny Hell's Kitchen spot is The Pig's Ass Sandwich -- a sandwich so important to the restaurant's brand that Casellula trademarked its name. A riff on the Cuban, this dish sees chopped pork butt and pickles layered on crisp ciabatta with two types of cheeses: sharp 5-Spoke Creamery Tumbleweed and nutty Fol Epi. The sandwich is pressed until hot and crispy, and it comes with a generous side of chipotle aioli for dipping.

Had the Pig's Ass Sandwich and it was AMAZING. Also had the Snapper Ceviche Tostado...couldnt stop thinking about it for days lol. Place is not that big, so there may be a wait, but its worth it. Cheese selection is also exquisite.
