Danny Meyer appeared on the Today Show yesterday talking about "things restaurants aren't telling you." Does untouched bread from the breadbasket get recycled? Um, no. Does a rib-eye that gets dropped on the floor in the kitchen still get cooked and served? Well, that depends. Meyer, of course, says no. But Steve Dublanica of Waiter Rant, who appeared alongside Meyer (you may remember his response to the Times' Bruce Buschel's list of "100 Things Restaurant Staffers Should Never Do, Part 1") says, why waste good meat?
